Nettle Udon
Udon recipe
Serve 2
- 1 handful Nettles
- 200g Plain flour
- 6g Salt
- 92g Nettle juice or water
Method
For making Nettle juice
- Bring a saucepan of water to the boil, then cook the nettles for 30 sec.
- Transfer to blender or use a stick blender to puree the nettle.
For making the udon noodle
- Combine flour and salt. Slowly add the nettle juice and mix well. The Mixture should form a stiff dough. If needed, stir in 1 to 2 tablespoons water.
- Make one bowl of udon pastry and put in a big strong plastic bag.
- Step on the udon pastry by walking on it until it is 30cm in diameter.
- Fold over the pastry to make aball, and step on it again.
- 30min in a fridge.
- Roll the pastry out until it is 3mm on a floured board (use corn flour for this)
- Use Knife to Cut into strips of 3mm width.
