Nettle Udon

Udon recipe

Serve 2

  • 1 handful Nettles
  • 200g Plain flour
  • 6g Salt  
  • 92g Nettle juice or water


For making Nettle juice

  1. Bring a saucepan of water to the boil, then cook the nettles for 30 sec.
  2. Transfer to blender or use a stick blender to puree the nettle.

For making the udon noodle

  1. Combine flour and salt. Slowly add the nettle juice and mix well. The Mixture should form a stiff dough. If needed, stir in 1 to 2 tablespoons water.
  2. Make one bowl of udon pastry and put in a big strong plastic bag.
  3. Step on the udon pastry by walking on it until it is 30cm in diameter.
  4. Fold over the pastry to make aball, and step on it again.
  5. 30min in a fridge.
  6.  Roll the pastry out until it is 3mm on a floured board (use corn flour for this)
  7. Use Knife to Cut into strips of 3mm width.
