Roasted Butternuts squash soup

材料

  • ・1 Butter nut Squash
  • ・1/4 celeriac
  • ・Salt
  • ・2Tbsp olive oil
  • ・1Tsp Thyme
  • ・Water
    *It goes well with almond or cashewnuts milk

つくり方

  1. Preheat oven to 180ºC. On a large baking tray, toss the cut vegetables with olive oil and season generously with salt and thyme.
    1. Roast until tender and lightly caramelised, about 20 minutes.
    2. Pour 700ml water or almond milk with the roasted vegetables into the pan. Bring to the boil, then puree with a hand blender
