Roasted Butternuts squash soup
材料
- ・1 Butter nut Squash
- ・1/4 celeriac
- ・Salt
- ・2Tbsp olive oil
- ・1Tsp Thyme
- ・Water
*It goes well with almond or cashewnuts milk
つくり方
- Preheat oven to 180ºC. On a large baking tray, toss the cut vegetables with olive oil and season generously with salt and thyme.
- Roast until tender and lightly caramelised, about 20 minutes.
- Pour 700ml water or almond milk with the roasted vegetables into the pan. Bring to the boil, then puree with a hand blender
